These are yummy and great for kids!

2 cups freshly squeezed lemon juice

1 cup boiling water

1/2 cup beef gelatin (I like Great Lakes or Vital Proteins)

1-2 tbsp raw honey (or more to taste)

Pour lemon juice into a shallow dish or 8×10 pan. Pour boiling water into a measuring cup and allow to cool slightly before dissolving the honey. Pour this into the pan and use a whisk to combine. Whisking gently, slowly add the gelatin. Allow to set in the fridge for at least 2 hours. Cut to serve or use cookie cutters to make fun shapes.
