Bibimbap is a Korean mixed rice dish that I love! The following recipe feeds myself, my husband and our toddler so you can adjust the amounts accordingly. Honestly, I rarely measure anything but these amounts will give you a guideline.
1.5-2.5 cups cooked organic sushi rice (or riced cauliflower if you’d like to go grain free)
3/4 cup raw kimchi
3 pastured fried eggs (best if the egg yolk is still runny)
3/4 lb grass-fed pub steak, sliced fairly thin, marinated (optional, see below) then seared
2+ cups greens such as kale or Swiss chard, steamed or sautéed in ghee or lard
Generous sprinkle of dulse flakes and sesame seeds
Fish sauce or sea salt, to taste
Put rice, kimchi, greens and steak in a bowl. Top with fried egg, dulse and sesame seeds. Add fish sauce or sea salt.
1/4 cup rice vinegar, 1 tbsp coconut aminos or organic soy sauce, 2 cloves crushed garlic, 1/2 tbsp grated ginger, dash fish sauce
